pie day

Today became a world wide pie day.  Even though I prefer crisp in taste and making, I decided to give it a try.  There were peaches local and they are so good.  I like them with yogurt.  I thought with a molasses cookie pie crust, a bit of honey, cinnamon, and ginger, a lovely pie would be made.  And it was.  My Beloved wanted seconds before I even finished my firsts.  It is a bit rustic looking but I do believe that was trying to work with the cookie dough in the heat.  I squished into a pie pan when my kitchen was hotter then outside.  It was above ninety outside.

Peach Pie with a Molasses Crinckle cookie crust

1 recipe molasses crinckles

2 pounds peaches

1/4 cup honey

1 teaspoon cinnamon

1 teaspoon ginger.

Preheat the oven to 350 degrees Fahrenheit.  Grease and flour a nine inch pie pan.  Mix the molasses crinckles per the recipe.

 

Pat the cookie dough into the pie pan.  I really only wished to use half but I used more of the dough.  I was fighting the heat.  Bake for 20 minutes in the preheated oven.

When the crust is baked, pull out and run a spoon over it to push down the poof.  Let cool for about 30 minutes.

In a large bowl, slice in the peaches.  Mix with the honey, cinnamon, and ginger.

Pour the peach mixture into the pie crust and bake for 40 minutes at 350 degrees Fahrenheit.

Serve.  I thought this was awfully rich but it would be good with homemade vanilla ice cream.

Like I said, I really prefer crisp.  It is probably what I will let it become next time.  But my Beloved likes it!

bag and knife

I will get all the bags posted that I made while we were gone.

I actually sent my Beloved and my Tall Short person to the fabric store without me yesterday.  Actually, it was in a different city three hours away.  They did a splendid job so there will be more bags soon.

This is what we went away for.  My Beloved forged another knife with his teacher Murray Carter.  He is actually selling it at his shop Serenity Knives .  But I admit to coveting it.  It would make a lovely bread knife.  My Beloved says he wants to make me one when his forge is done.  I can hope?

per request, pancakes

Miss S at work asked how to make pancakes a couple months back.  I realized that I think of them as easy but I have not written or followed a recipe in years!  While we were camping, I wrote this down for her.

Pancakes

Note:  I do not particularly care for fluffy pancakes.  If you do, add a bit more flour to make a thicker batter.

1 cup hempmilk or milk

2 eggs

1/4 cup brown sugar

1/2 teaspoon baking soda

1/2 teaspoon cream of tartar

(or instead of the two above, 1 teaspoon baking powder)

1 cup flour or very fresh whole wheat flour

1/4 cup melted butter.

Start heating your griddle.  I use a cast iron griddle and melt my butter on it as I heat it.

Put the milk, eggs, sugar, and salt in a bowl.  Mix well.  Mix in the baking soda, cream of tartar (or baking powder), and flour.  You wish it to be a little bit bumpy still.  Do not over mix.  Mix in the melted butter.

Pour by scant 1/4 cups on to the griddle (or in the cast iron pan).  I do not like large pancakes so I make them smaller.  Let cook until bubbles form, pop, and the top becomes dryish.  Turn and cook until brown.

Serve with syrup.  We really like these with roasted apples!

a bit of hand quilting

I played with the pockets a bit on this set of bags.  Part of it was that I wanted hand stitching to take with me when we had dinner with my Beloved's brother, sister-in-law, and friends.  I also wanted a pocket that blended better.  I decided to make it patchwork and then I hand quilted it.

I was thinking this was a bit of work so I also did some of the quilting on my machine.  The machine quilting is straighter but I think I actually like the hand quilting better.  It just takes much time!

This is the probably the most mellow of the bags I made last week.  It is strange to be back in an office.  I find that I have a hard time sitting that still.  I miss the creating and the playing with textures and fabrics I did all day long while at the campground.  I will just have to figure out how to do more.
