fruit pizza

I admit to have been doing a lot of roasting of fruit lately.  But I have also craved a bit of pizza.  Actually, more crispy bread with a bit of flavor.  I have never been that positive about regular tomato sauce based pizzas.  I got sick off of them a few times when I was small.

This was a nice savory sweet combo.  I had some goat gouda in the frig.  A few peaches that need to be used.  A sourdough crust.  Bake together and this takes care of the sweet and savory cravings at once.

1/2 recipe pizza dough

a couple peaches

2 tablespoons olive oil

1/2 cup or so of goat gouda or any cheese that goes well with peaches

a sprinkle of nice raw sugar

Preheat oven to 400 degrees Fahrenheit.  When the pizza dough has risen and is ready shape, roll out thin.  Smear with olive oil.  Sprinkle with cheese.  Put the peaches across and sprinkle the peaches with a bit of raw sugar. 

Bake for 10 minutes.

This was good straight out of the oven.  I also liked it three days later and was looking for more.  I will have to make more of this in other combinations.

By the way, we are off to the country.  I do not know what type of internet connections I will have access to so you may not hear from me until August.  Have a lovely end of July.

a simple dessert, roasted nectarines and plums

I have found that my body and the arthritis I have does not deal well with sugar.  Or at least not as well as I would like it to.  Sugar is the worst but it is also true for simple carboyhydrates.  Even so, I still enjoy sweets.  I have been trying to eat more fruit though.

I have started to roast stone fruit as a simple dessert.  The flavors get intensified and the sugar craving gets nixed.  There are little bits that are candied.  Roasting fruit also takes the best part of pie and puts it on your plate.  So, I have never been that fond of pie crust unless it is in pie crust cookies.  (Maybe I will post about those someday, so good with tea.)  This way, I get the best part of the pie!

Roasted nectarines and plums

1 plum per person

1 nectarine per person

a teaspoon of the best raw sugar you can find, if you wish

Preheat the oven to 450 degrees.

Slice the fruit into an oven proof pan.  Roast for 20 minutes or until soft with carmalized bits.  Remove pan from oven and put the fruit on a plate.  Make sure to get all the juices.  Sprinkle with a bit of raw sugar.

This would be really good with ice cream if you so chose.  We did not and there was nothing on the plate when we finished.  It was a nice finish to the curry I had made.

cheese crispy bread

I have been craving crispy bread.  A little cheese.  A little salt and pepper.  Pine nuts if I have them.  I started some pizza dough this last weekend and rolled it out thin.  A little olive oil, goat cheese, salt, and pepper and I fulfilled the craving.  I actually ate it at lunch this week as well.  Easy, easy.

1/2 recipe pizza dough 

1/2 cup goat cheese - I used chevre because that is what I had

2 tablespoons olive oil

salt and pepper

Preheat oven to 450 if you wish really crispy, 400 if not.

Roll the dough out VERY thin.  Spread with olive oil.  Dab with cheese.  Sprinkle with salt and pepper to taste.  Bake 10 minutes.

It was really crispy the first day.  It softened after that but I still enjoyed.  The hotter it was, the saltier it tasted but I do believe that was the cheese.

Add anything else you would wish.

contentment

Today was a crummy day at work.  Just frustrating.  I came home and it seemed really loud.  Which my head did not really deal well with.  Everyone then left to go look at toys.  I drank a pot of tea.  I put a backpack on my back and took my skateboard to the library.  

By the time I got there, a gentleman commented that I looked very content.  The fresh air, the ride, all seemed to relax me and put me in a place of contentment.  I picked up a pile of books and then road home.  I got to hit the hill on the way home.  I am such a hill junkie.  There was no surf today.  Or if there was, I could not get to it.  But by the time my family got home, riding on my board relaxed me enough to be a good part of the family.  

And do you know how many people smile at me on my board?  It may just be the dress!

small chores

Last night I spent the evening watching videos with my Beloved, a bit of wine, and crocheting.  It seems to be how we like to end the week since we have a tendency to run so hard.  It does mean this shawl is half done and soon I will be on the last skein of yarn.

Today has been a day of small chores.  Those chores that make life easier.  Some dishes are done.  The floors are swept.  The bed is made.  I spent a hour in the garden today.  The picture is one of the reasons why.  15 pumpkins so far and counting.  I am starting to get my garden ready for the autumn and winter already.  We have had so much rain this week that the weeds are taking over the world.  It is so much different then last year.  But instead of heat, the humidity is what determines how long I can work.  Today was a hour.  I find that is about what I can do if I wish to do anything else during the day.

Small Mister helped me knead this pizza dough this morning.  That was actually before the garden.  When he realized that he was actually going to get to HELP Grandmomma with the dough, he was excited.  His Momma held him and he helped.  It was very cool.

I have actually had a few minutes to card wool recently.  I do not know how that has happened but both yesterday and today.  I may see another shawl and hat in my future!  Mittens too maybe?  We will see.

It will continue to be a day of small chores, family, and, hopefully, a bit more tea.  It is a good day.
