fruit pizza

I admit to have been doing a lot of roasting of fruit lately.  But I have also craved a bit of pizza.  Actually, more crispy bread with a bit of flavor.  I have never been that positive about regular tomato sauce based pizzas.  I got sick off of them a few times when I was small.

This was a nice savory sweet combo.  I had some goat gouda in the frig.  A few peaches that need to be used.  A sourdough crust.  Bake together and this takes care of the sweet and savory cravings at once.

fruit pizza

1/2 recipe pizza dough

a couple peaches

2 tablespoons olive oil

1/2 cup or so of goat gouda or any cheese that goes well with peaches

a sprinkle of nice raw sugar

Preheat oven to 400 degrees Fahrenheit.  When the pizza dough has risen and is ready shape, roll out thin.  Smear with olive oil.  Sprinkle with cheese.  Put the peaches across and sprinkle the peaches with a bit of raw sugar. 

Bake for 10 minutes.

This was good straight out of the oven.  I also liked it three days later and was looking for more.  I will have to make more of this in other combinations.

By the way, we are off to the country.  I do not know what type of internet connections I will have access to so you may not hear from me until August.  Have a lovely end of July.
