chocolate cake for one that became for four

I found another one of those recipes that is supposed to be just for one, chocolate cake.  I figured before I even started that it would be for four though.  Just a portion size thing.  The Tall Short Person said dessert before dinner.  The Small Mister did not even help stir!  He was helping Grandpoppa.  But eat it he did! 

Now, since I have been eating so many more meals based around protein and vegetables (my arthritis pain is greatly decreased), my sweet tooth has lowered.  This was good but you know, I really preferred the slice of fresh out of the oven bread I had later this evening.  Yes, I am strange.

chocolate cake for one (really four)

1 egg

3 tablespoons olive oil

1/4 teaspoon vanilla

3 tablespoons heavy whipping cream

3 to 4 tablespoons sugar (I used 3, faerie would have liked 4 (I think she is a crow girl))

4 tablespoons almond flour 

2 tablespoons pecan flour

2 tablespoons arrowroot flour

3 tablespoons cocoa

3 tablespoons small semi-sweet chocolate chips.

pinch of salt

Preheat oven to 350 degrees Fahrenheit.  Butter four small ramekins.

Mix the egg, oil, milk, vanilla, and sugar together in a bowl.  Add the flours, cocoa, and salt.  Mix well.  Mix in the chocolate chips.  Spoon evenly into the four ramekins.

Bake for 20 minutes or until the edge pulls away from the ramekin and a knife comes out fairly clean.

Small Mister liked it so much he needed two forks.

The Tall Short Person thought it was this horrible.  She volunteered to take one for the family and eat everyone's.

chocolate chip cookies for two

Small Mister is in my charge a lot of times when I get home from work.  He is always looking for me in the kitchen.  I guess that really says something about my life.  My Beloved says Small Mister brings him things that I should be cooking.  I can believe this.  

I figured that I should make cookies for after work.  And just enough for two.  I had seen a recipe for chocolate chip cookies for one.  I tried it but was not completely pleased.  It gave me a framework to work within.  Small Mister helps me mix the doughs and dumps in what I have measured.  He makes sound effects with stirring.  It is pretty funny.

Now, I will say, I always make small cookies.  I make two to many peoples one.  Or maybe it was three.  I expected more cookies then two.  Like six.  But with changing the flours to gluten free, it was sixteen.  Enough for four in our house.  I can shrug now, yes?

 

chocolate chip chookies for two

2 tablespoons soft butter

4 1/2 teaspoons granulated sugar

4 1/2 teaspoons brown sugar

1 egg yolk

1/8 teaspoon vanilla

5 tablespoons almond flour

5 tablespoons hazelnut flour

5 tablespoons pecan flour

 5 tablespoons arrowroot

1/8 teaspoon salt

1/8 teaspoon baking soda

3 tablespoons chocolate chips.

Preheat oven to 350 degrees Fahrenheit.  Cover a baking sheet with a silplat or parchment paper.

In a small bow, cream the butter and sugars together.  Mix in the egg yolk and vanilla.

Mix in the flours, salt, and baking soda.  Mix in the chocolate chips.

Drop by teaspoon on the baking sheet.  Remember, I made 16 small cookies.  Bake for 10 minutes or until golden.

Enjoy.  Especially with a cup of tea and after a long day of work.  Think of the sound effects made.

more pinning 

I have been spending a lot of time at the sewing machine this weekend.  Mr. Gray's quilt has been quilted.  I just need to bind the edges.

Miss Ellie's quilt is pinned.  My helper was fast asleep.  I was able to get the first bit of quilting done before Small Mister woke himself up.  It was a nice way to decompress from work.

figs

I bought myself flowers again.  I just had too.  Life has been that busy.  I kept welcoming people to chaos on Saturday.  It was a good description.

At the farmer's market, I picked up some fig cuttings.  I am going to try to grow fig trees.  If they work, I am going to take more cuttings and start more trees.  They will go to Washington with us.

The farmer told me just to stick them in the dirt so I did.  Okay, they are pots but....  I am also trying the same with the rose bush I have in the backyard.  The on My Beloved says is taking over his forge.  But it smells so good.

And because it is cheaper then a bouquet, I bought myself a patio rose to enjoy.  I just need to be better about cutting the flowers I am growing.  I did cut a few zinnia yesterday and sprinkle the seeds of the ones I had let go to seed around the garden.  I can hope for more flowers.  I wish I grew flowers as well as I grow kale and romesco cauliflower!

broccoli salad and small fingers helping

I made the best salad last night!  Miss D from work has been talking about this salad:  broccoli, grapes, pecans, feta, a bit of red onion if you have it, and some vinaigrette.  Now I tweaked it a bit.  She uses raw broccoli but I do not really like that.  My Beloved would.  But I will have you know before we even got half way through this salad he was saying we could have this again.  My suggestion, if you make it, is make twice as much as you need because that is how good it is.

Now I fussed a little bit.  I roasted the broccoli.  My Beloved teased me about the grapes in half.  I had a feta in the refrigerator that had black pepper in it.  That made a very nice bite.  I used green onion instead of red because I had a lot of it from the CSA box (and more in the garden).  I did the fussing while the broccoli roasted.

Broccoli Salad

2 head of broccoli

2 tablespoonns of olive oil

a large pinch of salt

a large pinch of pepper

about 1/2 pound of grapes, cut in half

about 1/2 cup pecans, chopped

about 8 ounces feta

about 1/4 cup chopped onion

2 to 6 tablespoons of vinaigrette (to your taste)

Preheat the oven to 425 degrees.  On a baking sheet pour the olive oil.  Cut up the broccoli heads.  We liked little bits but do what you will.  Put on the baking sheet and toss.  Sprinkle with salt and pepper.  Bake for 20 minutes, stirring once in between.  If you want crisper broccoli, let it stay in the oven longer.  Not so crisp shorter.

While the broccoli is roasting, prepare the rest of the ingredients, except the vinaigrette.  Put in a large bowl.  When the broccoli is done, add to the bowl and toss.  Add the vinaigrette and toss again.

I could have this again tonight but we are cleaned out of everything that is in it.  Sigh.

I have been machine quilting and I have small fingers quilting.  Small Mister is very interested in the letters on my machine head.  He is a pretty good helper as long as he is interested.  Otherwise.....  He gets put down.  He liked seeing where all those safety pins went that he helped me with last night.  This makes me smile.
